This wine comes from the Family’s passion for dessert but not trivial wines. The climate of Poggi del Sasso hills during the harvesting period in particular years is strongly characterized by hot, dry, sunny days and colder nights than usual. This course is ideal to allow a late harvest of a part of Vermentino with small traces of noble rot on the berries that contribute to a more elegant nuance of the wine. After the harvest in mid-October the bunches are hung in a cool dry place for a few weeks and are subjected to continuous sorting up to the right level of concentration. The grapes are then pressed together to a small portion of aromatic Traminer that has followed the same mode of harvest. The wort obtained is fermented in barriques, where it then continues to refine. This sweet wine has been pressed in December 2015 and bottled in April 2017.
