Vinification
Each vintage of this wine is produced by selecting the best cask in the cellar. This wine usually comes from the oldest vineyards, and it ages more time in oak than Brunello. The soil is poor and rocky, mainly composed of clay and limestone. The production area is located in Castelnuovo dell’Abate, facing the Orcia River valley in the South-East region of Montalcino. The harvest is made manually. The selection of the grapes is exceptionally rigorous, resulting in very low yields. Vinification is in oak vats, with spontaneous fermentations led by indigenous yeasts and long macerations. This wine aged for 45 months in 30 hl Slavonian oak casks
